Carol Lane's Award-Winning Vegetarian Chili

I got this recipe from the local Messenger newspaper.  I believe this woman lives in the area.


Chopped onion

Chopped celery

3-4 chopped Anaheim peppers

Chopped carrots and parsnips

Chopped yams and sweet potatoes

28 oz can diced tomatoes

2 cups any variety of beans (canned or cooked dry)

2 small cans green chilies

3 T chili powder

1 tsp cumin

1/2 tsp cayenne

T (or more) oregano

cracked black pepper

6-7 coves garlic

large box vegetable broth



1. Saute vegetables in olive oil

2. Add tomatoes, spices, and herbs

3. When tender, add cooked beans and simmer 30 minutes.
