Curried Tomato & White Bean Soup


1Tbsp vegetable oil

1 cup chopped onions

1 Tbsp curry powder

3/4 tsp ground ginger

2 (15oz) cans white beans drained and rinsed

1 (28oz) can diced tomatoes, undrained

1 3/4 cups water


1. Heat large sauce pan over medium heat untl hot.  Add oil and onions; cook 5 min or until onions are tender

2. Stir in curry powder and ginger; cook briefly.  Stir in beans, tomatoes and water.  Bring to a boil. Reduce heat to low; simmer 15 min.

Yields: 4 - 1 3/4 cup servings
