Mock Duck Tacos

Mock Duck Tacos From "The Spoonriver Cookbook," by Brenda Langton and Margaret Stewart


1 medium onion, chopped

1 red or green bell pepper, diced

1 or 2 jalapenos, chopped

2 Tbsp vegetable oil or olive oil

2 cloves garlic, minced

1 Tbsp chili powder

1 8oz. package mock duck (seiten), traditionally seasoned, squeezed to remove liquid and chopped small

Juice of half a lime

3 Tbsp soy sauce

Pinch of salt

12 to 16 corn tortillas

Grated cheese


Saute the onions and peppers in the oil for 5 minutes.  Add the garlic and chili powder and cook, stirring, for a few more minutes.

Add the mock duck, lime juice, and soy sauce.

Cook over medium heat, stirring often, until the mixture is heated through.  Season with salt to taste.

Perheat the oven to 400 degrees.

Brush both sides of each tortilla with olive oil or vegetable oil and place it on the pan.

Top each tortilla with about 3 Tbsp of the taco filling and sprinkle on some grated cheese.

Bake until the tortillas are crispy on the bottom, about 8 minutes.

Serve with your favorite salsa.
