Potato Dumplings

Potato Dumplings with cabbage and caraway seeds (Bohemian Recipe???)


3 cups potatoes, peeled, cooked, mashed and cooled

2 egg yolks

1/2 cup Cream of Wheat

1 Tablespoon salt

2 cups flour sifted

Mix the ingredients together in a large mixing bowl.  On a floured bread board, roll out into a long roll shape.  Cut with knife to make dumplings. (flour hands while handling).  Bring water to a boil in a large kettle.  Add 1/2 teaspoon salt and 1 tablespoon butter.  Add dumplings to boiling water and boil for 10 minutes.  Turn with spoon and boil 10 more minutes. 

Fry cabbage in about a pound of butter (I know healthy huh?) add caraway seeds.

Add dumplings to fried cabbage.

My uncle made these for Christmas.  They were one of my grandpa's favorites.
