Recipe of the Month - Fried Egg Sandwich

Ingredients:

Eggs

English muffins

Cheese (cheddar or another favorite)

Bell Peppers (any color)

Olive oil

Directions:

Toast the English muffin. Slice the bell pepper so it makes a ring about a quarter to a half-an-inch thick. Put in skillet until charred. Crack an egg in the middle of the ring. Cook until the yolk is the way you like it. Flipping about halfway through. Place the cheese on the hot egg and pepper and cover the pan to allow it to melt before placing the whole thing on the English muffin. Enjoy!
